【City】高級Japanese RestaurantにてSushi Chef募集!
求人内容
- おまかせメニューの準備
- 様々な種類の魚を料理に応じて調理
- 巻き、にぎり、刺身などあらゆる種類の寿司をリクエストやメニューに応じて準備
- 新鮮な野菜や果物を料理に応じて選別
- 料理に使われる果物・野菜・魚の品質を検査し、基準に満たない場合は上司に報告
- 品質や料理のポーション、および食品の安全性に関してはガイドラインに従う
- 調理場は清潔な状態を維持
- 定期的な在庫の確認
- 調理器具の消毒
- 特別なリクエスト(食物アレルギー等)の対応
- その他関連業務

- Able to prepare Omakase Menu.
- Expertly cutting, slicing, and filleting different types of fish.
- Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
- Prepare all types of sushi, including maki, nigiri and sashimi
- Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots)
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard.
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
- Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine
- Maintaining a clean work environment in order to prevent food contamination.
- Regularly taking inventory of food supplies and other products.
- Reporting any problems with kitchen equipment to the manager on duty.
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
- Communicating with wait staff to ensure that special requests and food allergy considerations are met.
- Any other ad-hoc duties assigned
応募資格
【必須条件】
- 最低5年のおまかせスタイルの日本食の経験
- 寿司カウンターにておまかせスタイルの寿司を握った経験がある方
- お客様としっかりとしたコミュニケーションが取れる方
- チームで働くことができる方

- At least 5 year(s) of working experience in Omakase Japanese Fine Dining Restaurant.
- Skillfull in Omakase Sushi preparation at front counter
- Good Communication skills and engaging with customers .
- Team player
